Celebrity Chef Charlie Trotter is creating quite a following at his innovative “C” restaurant at the One&Only Palmilla resort in Cabo. This restaurant might be next to be the beach but when you walk in you feel like you’re in a world away from the traditional Mexican fish tacos and enchiladas. The top-rated wine list alone will make you feel like you’re dining in New York City. It’s a tasty TRAVEL THERAPY you don’t want to miss! This restaurant is truly special because….
with a creed like, “The best is only good enough,” Trotter focuses on uses the freshest local ingredients and seasons with classic Mexican flavors. One of the best ways to sample his genius is to try his famous degustation tasting menu paired with fine wines while you dine at the invitation only chef table inside his show kitchen or in one of the reserved private dining rooms. “I believe you have to love wha you are doing and if you do, it is simple to do things at a never-before-seen levels. Simply put, I am in love with food,” says Trotter.
To dine at C’s is an EVENT. Plan on spending at least 2 hours on dinner and an insider tip…you don’t need to be a guest at the One&Only to dine here but only a few tables a night are usually saved for people outside the resort so if you’re interested in coming reserve well in advance.
During our tasting menu the show stopper was the “C” Pacific Sushi Bento where a Soy-sake mirin marinated slice of Japanese Kobe beef was brought out to each of us in the Bento box along with a steaming hot rock that we had to cook our own beef on for a few second. I have eaten at some of the top restaurants in the world but I’ve never experienced anything like that before! Wine pairings included everything from champagne, Riesling, Chardonnay, Burgundy and my favorite, a delicious full bodied red called Torremilanos, Crianza, Ribera Del Duero, Spain, 2003.
By the time you get to dessert, a passion fruit pudding cake with raspberries and a chocolate crepe with lime sherbert and coconut emulsion you will think you have died and gone to heaven.
